Technological know-how and innovation

The continuous development and the solution optimization of Mauting air-conditioned chambers, provided with the advanced control system, guarantee the complete control of the running process in the every moment. The air-conditioned chambers ensure the optimal flow, speed, direction and change of circulating air which are the fundamental prerequisite for obtaining the uniform distribution of temperature and humidity in the whole space of the chamber.

We have aimed at the economics of operation and the reduction of total costs. According to the constructional version, the various air flow systems in the chamber may be applied:

The DAF and CrossFlow air flow systems ensure the most uniform drying in all places of the chamber and the most possible dehumidification without lowering the product quality. The system enables to adjust at will the air quantity from above or below so that the as quick as possible drying of the product on the required water activity with limited risk of the product ring girdling can be ensured.

  • The DAF (Dual Air Flow) system - The recirculated air, entering the chamber, is cyclically led in the horizontal direction above trolleys and in the vertical along the chamber sides. The air quantity from the left and right side varies from 30% to 70% continuously. DAF1 system – The air is sucked from the chamber through the channels situated above trolleys DAF2 system – The air is cyclically sucked from the chamber through the channels situated above trolleys and along the chamber sides.
    The recommended application: The KMZ air-conditioned cold smoke pre-ripening and curing units for the first phase of fermentation The KMD air-conditioned post-ripening and drying units for drying and ripening For the fermented products with high dehumidification For the products at which the emphasis is placed on fast and uniform processing DAF1 system is determined for KMZ units up to 2 rows and KMD up to 7 rows. DAF2 system is determined for KMZ units up to 4 rows .
         
  • CrossFlow system – The recirculated air is cyclically brought in to the chamber from above through the channels situated above trolleys and drawn off through the channels situated along the chamber sides and according to the program, the air flow direction is reversed and air is brought in from bellow upwards and sucked out through the channels situated above trolleys. The CrossFlow enables the fastest drying on the required water activity with the limited risk of the ring girdling of a product.
    The recommended application: The KMD air-conditioned post-ripening and drying units for drying and ripening For ripening of fermented products with the high dehumidification For drying and ripening of the thermally processed products with the high dehumidification For products at which the emphasis is placed on fast and uniform processing For large KMD.

 

  • EquiFlow system – The recirculated air is brought in to the chamber from above through the channels situated above trolleys and drawn off through 1 or 2 channels situated along the chamber sides.
    The recommended application: For drying completely and ripening of the classical fermented products. For drying completely of fermented products, the first phase of which has been carried out in the KMZ Classic


  •  Classic system – The recirculated air is brought in to the chamber vertically through the channels situated along the chamber sides and drawn off through the channels situated above trolleys. The air quantity from the left and right side varies from 30% to 70% cyclically.br />The recommended application: For KMZ units with no more than 2 rows of trolleys and the humidification requirement at the most 3% / 24 hours. For classic fermented products with the humidification requirement at KMD units up to 1,5%. For KMR defrosting units .

     

  • Central system – The recirculated air is distributed with the central three-fold channel situated above trolleys. The central channel serves for air sucking from the chamber; the side channels serve for the horizontal air distribution in to the chamber.
    The recommended application: For KMD units for the classic ripening of fermented products and drying of the thermally processed products. For products with the requirement for relatively low dehumidification. The application possibility in the atypical rooms with irregular shapes, columns and so on. For KMR defrosting units.
