The universal KMU chambers are designed for both phases of fermentation, i.e. for the first phase as well as for the subsequent maturing and drying of the product. They are suitable for fermented products with starter cultures, for GDL technology or for the conventional production of durable salami, sausages, ham, bacon and smoked meats, both processed and unprocessed.
They can be equipped with electric, steam or hot water heating. The cooling exchanger can work with different types of Freon, antifreeze or ammonia.
The chambers are equipped with an advanced control system that guarantees perfect control of the process at all times. By using the physical principles of absolute humidity and enthalpy, excellent operating economy is ensured using only the necessary amount of energy.
The chamber can operate continuously or intermittently, based on the air parameters in the chamber. The possibility of alternating airflow (DAF1, DAF2 and CrossFlow systems) increases the uniformity of product processing and reduces the risk of surface drying. As a result, the entire process can be safely accelerated by up to 20%. The chamber is always designed according to the customer's specific requirements.
